McCarthy’s Irish Cream is a recipe from my mother from 2nd World War Northern Ireland, which we serve at The Red Stag as our “much better than Baileys” Liqueur. It can also be incorporated in our McCarthy’s Irish Cream Coffee. If you don’t love it, we’ll be really surprised.
Irish Coffee was developed in Ireland by Joe Sheridan, a restaurant owner in Foynes County Kerry early in the 1940s as a ploy to attract American visitors who landed in flying boats (the first regular Trans Atlantic crossings) on the River Shannon and docked at his jetty. Armed with the knowledge that Americans loved coffee and sweet cream ladened items, he devised one of our favourite beverages. The Irish Coffee became popularized in the USA when Joe Sheridan took a position at the famed Buena Vista Cafe in San Francisco and made it a staple on their menu. Sheridan’s Irish Cream ,which comes in a split bottle with the black on one side and the cream on the other, is poured to look like an Irish Coffee, and just as in the original drink, is designed so the coffee is sipped through the cream. Other Irish Cream Liqueurs such as Bailey’s became popular over the years — but we think you’ll agree that our own version is by far the best.

What is a Snug?
Back in Ireland in “years gone by”, women weren’t really welcome in pubs (at least reputable women), so many pubs built Snugs to provide a safe haven inside the pub. We have three Snugs in The RSP, inspired by the Crowne Saloon in Belfast, Northern Ireland. We think you will love the ambiance, great for a private lunch meeting, a Marriage Proposal, or just a place to hang out with friends on a weekend.
McCarthy’s Red Stag Pub now has three Whiskey Snugs where you can dine, chat, and enjoy your time with friends and family…or strangers if you wish.
The three snugs are named: The Dog Snug, Snug 2, and Snug 3. Try one out for yourself!
